Prawn Green Curry

Ingredients:

50g green curry paste
1 Tbsp sesame oil
1 can coconut cream
150ml milk
4-6 small baby marrows (chopped)
1 tsp sugar
1 tsp fish sauce
Prawns
Coriander to garnish
Greenfish

Instructions: 

1. In a large saucepan on medium heat add the curry paste and sesame oil and allow to simmer for a minute to release flavour.
2. Lower the heat and add the coconut cream, milk and chopped baby marrows and simmer for 10 minutes.
3. Add the sugar and fish sauce allowing to simmer for a further minute.
4. Add the prawns and let them simmer in the sauce for a few minutes, turning them over as they start to turn pink.
5. Once prawns are just pink, switch off the heat and let them rest in the sauce, absorbing all the flavours.
6. Garnish with fresh coriander and enjoy with basmati or jasmine rice.
