Our Portuguese sardines are fresh caught in the Atlantic Ocean off the west coast of Portugal and Morocco, and immediately frozen to preserve their distinctive, salty flavour. Sardines have long been a staple for the people of Portugal whose history is tied to the cold Atlantic Ocean where these fish flourish. The Portuguese prefer to enjoy their Sardines whole, grilled over hot coals.

Instructions
Your Portuguese sardines will arrive frozen, simply store in your freezer (up to 3 months) and use at your leisure. It is best to remove product from packaging to defrost, simply place on a tray in your fridge and allow to thaw slowly.
Any special requests or instructions can be left in the NOTES section at the Checkout. Eg: Your doorbell does not work, you require a phone call before the order arrives, you would like the fillets / steaks vacuum packed seperately or cut into smaller portions etc.

European Sardine are caught by purse seine nets which are set around a school of fish in the surface to mid-water. Discard rates in this type of fishing is low and an impact on endangered, threatened or protected species is unlikely. Bycatch of non-target species is also considered to be low.

Fishwife Recipes
Traditional Grilled Sardines
Grilled sardines are quick and easy to make, and generally how they are eaten in Portugal. See how in this recipe from The Fishwife. You will need:
- 24 fresh caught Portuguese sardines
- 2 tablespoons extra virgin olive oil
- Salt
- Freshly ground pepper
- A handful of fresh rosemary sprigs
- Lemon wedges
Preparation:
- Prepare a hot grill, making sure the grill is oiled. Rinse the sardines, and dry with paper towels. Toss with the olive oil, and season with salt and pepper.
- When the grill is ready, toss the rosemary sprigs directly on the fire. Wait for the flames to die down, then place the sardines directly over the heat, in batches if necessary. Grill for a minute or two on each side, depending on the size. Transfer from the grill to a platter using tongs or a wide metal spatula and serve with lemon wedges.
